Classic Pesto Recipe

2 cup fresh basil leaves

3 cloves garlic

1/2 cup grated parmesan cheese

1/4 cup walnuts or pine nuts

1/2 cup olive oil

sal and freshly ground pepper to taste

Place all ingredients into a food processor and blend until smooth. Poor into a pint sized jar and pour a thin layer of olive oil on top. Seal tightly and refrigerate. Should be used or frozen within 6 weeks.

Variations:

Substitute other types of basil (Lemon, exotic, dark opal)

replace half the basil leaves with fresh oregano leaves or fresh mint leaves
