Chick w Tomatoes and Peppers

This was a hit. Can serve with pasta as a side dish, or whatever else you’d like.

4 servings

2 TBSP olive oil
1 TBSP garlic salt
1 TBSP chopped parsley
1 TBSP chopped chives
1 tsp ground black pepper
1 tsp old bay seasoning
1 tsp seasoning salt
4 skinless, boneless chicken breast halves
2 medium green bell peppers, chopped
2 large tomatoes, chopped
1 red onion, chopped

1. Preheat oven to 350 degrees.
2. In a medium bowl, mix the olive oil and all the spices.
3. Rub the chicken breasts with 1/2 the mixture and place in a medium baking dish.
4. Toss the green bell peppers, tomatoes, and red onion in the remaining mixture and arrange over chicken.
5. Bake for 1 hour in preheated oven.
